Chicken Satay

This chicken satay recipe is a perfect healthy grilled Summer appetizer that everyone will love.

Ingredients
or1/2 cup lite coconut milk
or1/4 cup of lime juice, raw (61 g)
or1 Tbsp coconut sugar
or3/4 tsp curry powder
or1 Tbsp ginger finely grated
or2 tsp gluten free reduced sodium tamari
or2 tsp fish sauce
or1 lb skinless boneless chicken breasts cut into 1/2 inch strips
Preparation
1.
Combine the marinade ingredients and transfer to a resealable bag with the chicken. Refrigerate and marinate for 2 hours.

Preheat your grill to medium high heat. Thread the chicken pieces onto long skewers (being sure to soak them first if they are wooden) and grill for about 4-5 minutes per side, until cooked through.
3.
If you don't have access to a grill, you can purchase a inexpensive oven grill pan from Target, Wal-Mart or Amazon.
