Nut-Free Raw Ginger Cookie Dough Balls

These nut-free raw gingerbread cookie dough balls taste just like gingerbread cookie dough without the added fat or sugar! They only take 5 minutes to make with a few simple, wholesome ingredients and even though they taste like dessert they’re perfect for a healthy snack.

Ingredients
or2 cups (340 g) loosely packed, soft pitted dates
or1 1/3 cup (150 g) oats
or2 tbsp (40 g) molasses
or3 tsp ground ginger (fresh ginger not powdered)
or2 tsp cinnamon
or1/2 tsp sea salt
or1/2 tsp pure vanilla extract
or1/4 tsp nutmeg
Preparation
1.
Place all ingredients in a high-powered blender or food processor and mix until it forms a thick dough.

Roll into approximately 14 balls.

Store in the fridge or freezer.

It’s important to use soft, fresh dates in no-bake recipes like this. The dates sweeten the recipe and hold it all together. Medjool, sayer or deglect noor dates are the best. If you only have hard, dry dates, soak them in hot water for 20 minutes and drain before using.
