Honey-Glazed Spiced Carrots

The naturally sweet and earthy flavor of carrots is enhanced during the roasting process in this carrot side dish recipe, and the honey and spice dressing adds an extra layer of fall flavor.

Ingredients
or4 tablespoons earth balance butter, melted
or3 tbsp of raw, unfiltered honey
or1 tablespoon light brown sugar
or1 1/2 teaspoons kosher salt
or1/2 teaspoon ground cinnamon
or1/4 teaspoon ground nutmeg
or1/4 teaspoon black pepper
or2 pounds small multi-colored carrots, peeled and trimmed
or1 tablespoon thinly sliced fresh chives
Preparation
1.
Preheat oven to 400°F. Stir together first 7 ingredients in a small bowl; reserve 2 tablespoons of mixture. Pour remaining butter mixture over carrots; toss to combine. Spread in a single layer on 2 baking sheets; bake in preheated oven 30 minutes.

Toss roasted carrots with reserved 2 tablespoons butter mixture; transfer to a serving platter. Sprinkle with chives.
