Chicken Sausage and Spinach Egg White Frittata

or7 Links of al Fresco, Countru Style, Breakfast Chicken Sausage (224 g)
or4 tbsps of butter, salted (57 g)
or1 cup of tomatoes, crushed, canned (242 g)
or4 cups of spinach, raw (120 g)
or4 tbsps chopped of chives, raw (12 g)
or2 cups of egg, white, raw, fresh (486 g)
or1/2 cup, crumbled of cheese, feta (75 g)
Preheat oven to 350°. Melt 1 tbsp of butter in a medium sauté pan, then increase the heat to high, add the chicken sausage, and sauté until about three-quarters done, lightly browned. Add tomatoes and spinach and sauté for 1 minute, then remove from heat. Add chives and feta cheese. Season with salt and pepper. Place a 6" ovenproof non-stick skillet or well-seasoned 6" cast iron pan over medium heat. Add 3 tbsp of butter. Add egg whites and spoon the al fresco chicken sausage mixture into the center of the egg whites. Bake in the oven until set (10-12 minutes).
