Slice the eggplant into 1/4" thick rounds
Lightly salt the slices to release excess moisture for about 30 mins
Preheat the oven to 450F
Spray the olive oil on both sides and place on cookie sheets
Bake for 20-25 mins; turning halfway through
In a bowl, combine ricotta, egg, parsley, grated cheese, and spinach
In 9x12 baking dish, layer marinara, sliced eggplant, sliced zucchini, ricotta mix, and top with marinara & mozzarella
Preheat the oven to 400F
Cover with foil and bake about 30 mins
Remove foil and bake additional 8-10 mins

Portions: 4

In a large pot, melt butter
Add onion, celery, carrots, and garlic
Add heavy cream, milk, and broth
Heat to boiling
Transfer to slow cooker & add remaining ingredients
Cook on low for 1-1.5 hours
