Three Cheese + Eggplant Lasagna

or452 grams of pasta, dry, enriched
or1 unit, unpeeled (approx 1-1/4 lb) of eggplant, raw (548 g)
or2 cups of cheese, ricotta, whole milk (492 g)
or2 cups, shredded of cheese, mozzarella, low sodium (226 g)
or2 cups of cheese, parmesan, grated (200 g)
or2 large units of egg, whole, raw, fresh (100 g)
or2 tsps of spices, garlic powder (6 g)
or1 tsp of salt, table (6 g)
or1 tsp, ground of spices, pepper, black (2 g)
or3 tsps of spices, parsley, dried (2 g)
or4 cups of tomatoes, crushed, canned (968 g)
or1 cup, chopped of onions, raw (160 g)
or4 tablespoons of oil, olive, salad or cooking (54 g)
or6 cloves of garlic, raw (18 g)
or1/4 whole cup of leaves of basil, fresh (6 g)
Make the sauce; In a saute pan, over medium heat, saute the onions and garlic in olive oil until browned, about 10 minutes. Add the crushed tomatoes and simmer over medium heat for 15 minutes, or until slightly reduced. Add the chopped basil and set to the side.
In a large bowl, combine the ricotta, one cup of mozzarella, one cup of parmesan, eggs, salt, pepper, garlic, and parsley. Stir to combine.
Assemble the lasagna; in a 9 x 13 pan, place 1 cup of sauce in the bottom. Line the bottom with four lasagna sheets. Place a layer of eggplant on top of the noodles, and then 1/3 of the cheese mixture. Top with another cup of sauce, pasta, eggplant, and cheese. Do this once more, with sauce, pasta, eggplant, and cheese. Top the lasagna with the remaining sauce, then cover with aluminum foil.
Bake the lasagna for 75 minutes (covered with the foil). Uncover and bake for an additional 30 minutes, or until bubbly and the lasagna noodles have started to crisp on the edges. Top with the remaining mozzarella and parmesan, and broil for 5 minutes, or until the cheese is brown and bubbled.
